Strawberry & Ginger Fizz
Preparation 10 minutes, plus chilling time
Cooks in 4-5 minutes
750g Jubilee Selections strawberries, washed and hulled, plus extra for decoration
50g caster sugar
1 litre ginger beer
A handful of mint leaves
Pour the strawberries and sugar into a large pan with 3 tablespoons of water. Place on a low heat and gently simmer for 4-5 minutes.
Strain through a sieve into a large jug or bowl to remove all the seeds and any large pieces of fruit, cover with clingfilm and set aside to cool before placing in the fridge for at least an hour.
When ready to serve, fill a large glass jug or bottle with some ice and add the ginger beer with the strawberry juice. Mix well, and serve with slices of lime, mint leaves and extra strawberries.
